There are some great bargains on a very limited number of the near-impossible-to-get trade paperback (that's the big book) copies of The Farm at Peppertree Crossing and The Wattle Seed Inn. These are still in good condition, unread, but they do have some page discolouration and wear from road-tripping around events with The Kid and me.

Nab one of these copies to complete your collection, and it'll almost be like you were there with us...without the arguing, op-shopping and general mayhem, that is.

RECIPE

Oops, I nearly forgot to pop this in! Loads of yousent your well wishes to The Kid, who is down with a lurgy. I mean, that's nice of you and all, but how about you keep the caring for me? I'm sure she's going to hand it on, and I don't want you to be all out of sympathy when I start sooking... Anyway, The Kid requested I make her lemon slice and loads of you messaged asking for my recipe, so I'll pop it here. There's definitely nothing healthy or low-calorie about this (it's made with lemon curd, which cooks onto the pastry) but sometimes we need a treat, right?

Recipe my way:

Make a pastry base (I suspect a biscuit base would work, too, if that's your go to. I like a shortbread, so mix

·        1/2 cup sugar

·        2 cups flour

·        1/4 tsp baking powder

Then rub in one cup of cold butter cut into pieces (I did mention about it not being calorie-friendly, right?)

Press this into the base of a tray (I use a glass to make sure it's firm) and bake for twenty minutes at 180 degrees

Lemon Layer

·       2 1/4 cups sugar

·       1/3 cup + 1 tbsp flour

·       6 eggs

·       zest and juice of three lemons

1.    Whisk together all ingredients until the sugar is dissolved or you're bored. (I generally hit the bored bit first)

2.    Let it sit for about 10 minutes, then whisk well again before pouring over the baked base.

3.    Bake at 180 degrees for 20- 25 minutes or until the top is slightly browned and the custard appears to be set.

4.    Cool completely. Dust with icing sugar. Though if you're like me, you can't wait for it to cool, so the icing sugar will melt - so skip this step and just ENJOY!
